Boondi Laddu: by Mohini Kamath
Ingredients
2 cups of besan. Shift it mix with water slowly to smooth batter. not too thin and not too thick add may be 3/4 water.
To make syrup
2 cups of sugar
3/4 cup water
Method
when the syrup bubbles slowly in the low flame. Add a drop on a plate to check the consistency. It should be sticky.(not too sticky). Add bit of saffron.
In a pan fry the boondi , stir when boondi (is not crispy) color changes a bit – keep aside.
Slowly add boondi into sugar syrup.now and then stir the boondi mixture .
Let the mixture cool-now and then stir it-boondi gets sugar coated well.
Take 3 teaspoon ghee add cashew pieces, 2-4 lavang, raisins on low flame stir. Add to the boondi mixture.
Trick is making laddus slowly – Good luck.
